Chorizo Hash with Poached Egg
Ingredients
1. 2 lbs maris pipers
2. 2oz butter salted
3. salt and pepper
4. 4oz chorizo cut and diced
5. large pinch of paprika
6. 6 eggs water vinegar
7. dried parsley
Method
Boil peel maris pipers potatoes
Add butter salt and pepper
Gently cook chorizo and finish with sprinkle of paprika
Add chorizo and parsley to mash and cool in fridge
Put water on to boil add some vinegar. White is best but malt is ok.
Break eggs into cups one at a time.
Stir water then add eggs one at a time cook for about 2 ½ minutes on a simmer
Remove and plunge into cold water
Form potato into a 2/3 inch plate
Reheat in oven for about 10 mins
When potatoe is hot place on a plate topped with a poached egg.
I like mine to be cold but your could just pour boling water over egg to reheat!
